Sweet Jane
Sweet Jane is a very distinct and complex sauce. Kind of like the alternative rock performances by the Velvet Underground with Lou Reed combined with the Andy Warhol influence. Hence this sauces name “Sweet Jane”! That was the actual vinyl I was spinning and song I was listening to while making this sauce.
This sauce contains a whopping 30 ingredients and all of them play off each other quite interestingly, just like the band members did! Sweet Jane has a medium heat that doesn’t linger too long at all with a sweet finish. The sweetness comes from carrots, sweet bell peppers and a little bit of cranberry juice. The heat comes from piquin, arbol, habanero and red chili peppers. Sweet Jane, like my Freeburd sauce, is a non fermented sauce and is aged in the bottle. This sauce works wonderfully on poultry, pork and fish but, mix it with Worcestershire sauce and it is incredible with steak! Sweet Jane also makes a great barbecue sauce base when you mix it with a little ketchup or tomato sauce and molasses. This is a very flavorful, flexible sauce unlike any you have tasted before!
