About the ingredients:

Here is a list of some ingredients that I use in my Peppers4Parkinson’s sauces and recipes. I have done a lot of experimenting over the decades with the amounts, combinations, preparation and flavor compatibility of various ingredients. Just smoking or even heating a single ingredient can change it all together. So basically, have fun! Experiment and come up with your own too! The Cubanelle Pepper is considered a sweet pepper, although its heat can range from mild to very moderate. It is not a very hot pepper. The peppers are usually picked before they ripen, when they are light green or a yellow-green color but they turn bright red to orangish red as the ripen.

Cubanelles are also called the Italian Frying Pepper, because they are great in a frying pan with a little olive oil.

The Cubanelle pepper is quite mild, measuring in at 0 – 1,000 Scoville Heat Units, which is quite a bit milder than a typical jalapeno pepper. Buy On Amazon

Poblano peppers are Mexican chilis that come from the state of Puebla hence their name.

They provide a lot of flavor with a relatively mild to medium-heat  measuring between 1,000 and 2,000 on the Scoville Scale. They’re hotter than banana peppers but not as spicy as jalapeno.

When poblano peppers are dried, roasted or smoked, they transform into ancho chilis providing a unique set of flavors. They take on a sweet, fruity flavor with hints of smokiness.

The name of the jalapeño pepper comes from the place it is thought to have originated- Xalapa, Veracruz. These chiles go by a variety of other names too like cuaresmeños or chiles gordos.

In their green form, jalapeño peppers have a fresh, bright, green bell pepper flavor with a kick. If you leave them to ripen longer, red ones carry a slightly sweeter flavor and increased spiciness.

I actually smoke these which gives them a sweeter, smokier flavor.

Jalapeños are relatively low on the Scoville Scale. They come in around 2,500-8,000 Scoville Heat Units. Compared to habanero peppers (100,000-350,000), jalapeños are thought of as a mild-medium chili. Buy on Amazon

I really like these little peppers. Most describe fresh or dried Piquin peppers as having fruity and nutty flavors with hints of citrus. These come in on the Scoville Scale right around cayenne and Thai peppers.

The chile piquín is quite hot, measuring around 40,000-60,000 Scoville Heat Units. That’s about halfway up the scale compared to other spicy peppers.

Arbol peppers (“tree chili”) referring to the long wood-like stem. It is also known by other names like rat’s tail chili. Originally from the Mexican states of Jalisco and Oaxaca.

Unlike most peppers that take on other names once dried, “chile de árbol” is the name given to the fresh, dried, and powdered form of this pepper. Once dried, arbol peppers can be toasted to impart unique flavors. The flavor of a dried arbol is smoky, nutty, and slightly grassy. Again, all of these notes are accentuated by toasting the peppers.

Mini Sweet Peppers

Mini peppers are smaller and sweeter than larger bell peppers. They pack a flavorful punch in a little bite. is a small, hybrid sweet pepper. The Vine Sweet mini pepper’s size ranges from 1.5 inches to 4 inches, and can be found in red, orange, and yellow. The pepper was developed in the late 1990s.

This is a VERY important ingredient! I only use raw, unfiltered and non-pasteurized buckwheat honey. I would prefer to use Manuka Honey but, at 61 bucks a pound, that is just not do-able. Buckwheat honey has a very great flavor and not too sweet, slightly malty with almost a touch of molasses and butterscotch. Works perfectly in my hot sauces! Buy it on Amazon . Yes, this stuff is the ONLY soy sauce I use. If you are hand making something and putting your name on it, you honestly want the best. Sempio Naturally Brewed Soy Sauce 701 is the top of the premium line in Sempio soy sauce selections. It has the highest TN number (greater than 1.7). The TN number indicates how much actual soybean protein is contained. The higher the TN number, the more premium the soy sauce is. (A TN number of 1% is average, 1.3% premium, and 1.5 – 1.8% super premium.) It is naturally brewed through a 5-step fermentation process over 6 months, unlike Jin-Gan-Jang which is chemically produced. Some regular soy sauce contains refined salt in the fermentation process and corn syrup to add sweetness. Okay folks, I put these great Dried Bell Peppers in all kinds of of stuff I am cooking. Need a quick Ramen Noodle lunch? Skip the sodium rich seasoning packet and put a small handful of these in there! OMG the cheap noodle soup is now really, really good! I also add a little 701 Soy Sauce (above). I sprinkle some of my powdered seasoning in there too, or any of my “warmer” peppers sauces to kick it up yet another notch! I even put these peppers on my pizza! For pizza, I put some in a cup with some water, nuke them for a minute, then sauté with the onion to top off my pizza. They work great in rice dishes too! These Dried Bell Peppers are really, really handy to have in the cabinet. I use some in one of my sauce recipes before fermenting. I have also rehydrated them and smoked them. They have great flavor and are VERY cost effective.
